Giuseppe arrived in Canggu with two decades of fine-dining experience behind him — kitchens that held Michelin stars, classical Italian rigour, and an obsession with flavour above all else.

At Kasto, he channels that mastery into something entirely new: a plant-based Italian menu that refuses to compromise. Every dish is engineered with the same precision he applied to multi-course tasting menus in Europe — but the philosophy here is lighter, more alive, rooted in Bali's extraordinary produce.

His signature dishes say everything: the Brasato Plin Ravioli — "beef" slow-braised in red wine, folded into hand-pinched pasta — and the Oh My Pork pulled pork panini, which has quietly become one of the most-talked-about bites in Canggu. Giuseppe is redefining what vegan Italian cooking can be.

KASTO began with a van, four Italian friends, and 7,000 kilometres of raw Australian coastline. Surfboards strapped to the roof. A shared conviction that food could be both deeply Italian and entirely plant-based.

We make everything in our kitchen — from the dough to the meatballs. Pasta is rolled by hand each morning. Sauces simmer from scratch. Nothing comes from a packet. Ever.

Kasto is a restaurant with a purpose: serving our people ethically sourced, plant-based food, made with local Balinese ingredients of the highest quality. We believe there is nothing better than sharing — so order a few dishes, bring people you love, and eat the way Italians do.
